Description

Stuffed Pepper Carrots are a quick and festive appetizer made with mini orange sweet peppers filled with a creamy dill and cream cheese mixture. These bite-sized snacks resemble little carrots, making them perfect for Easter gatherings, spring parties, and healthy appetizer platters. They are easy to prepare in about 10 minutes and deliver a delicious balance of crunchy peppers and smooth, savory filling.

Ingredients

Scale
  • 4 mini orange sweet peppers, sliced lengthwise
  • 4 oz cream cheese, softened
  • 3 tablespoons sour cream
  • 1 tablespoon fresh dill, chopped
  • 1/2 teaspoon ranch seasoning
  • 1 bunch fresh dill sprigs (for garnish and carrot tops)

Instructions

  1. Wash the mini orange peppers thoroughly and pat them dry. Slice each pepper lengthwise to create two halves.
  2. Carefully remove the seeds and inner membranes from each pepper half to create space for the filling.
  3. In a small mixing bowl, combine softened cream cheese and sour cream. Mix until smooth and creamy.
  4. Add the chopped fresh dill and ranch seasoning to the bowl and stir until the mixture is fully combined.
  5. Spoon or pipe the cream cheese mixture into each pepper half, filling the cavity evenly.
  6. Insert a small sprig of fresh dill into the top of the filling so it resembles carrot greens.
  7. Arrange the stuffed peppers on a serving platter and serve immediately or refrigerate until ready to serve.

Notes

  • Allow cream cheese to soften at room temperature for easier mixing.
  • For a lighter version, use reduced-fat cream cheese or Greek yogurt instead of sour cream.
  • A piping bag or zip-top bag with the corner cut off can help fill the peppers neatly.
  • If fresh dill is unavailable, dried dill can be used in the filling.
  • Stuffed Pepper Carrots can be prepared up to 24 hours in advance and stored in the refrigerator.
