Description

Texas Roadhouse Smothered Chicken features marinated chicken breasts smothered in sauteed mushrooms and onions, then topped with gooey, melted cheese. It’s an easy, flavorful dish that you can easily replicate at home, delivering the perfect combination of savory, cheesy goodness and tender chicken.

Ingredients

Scale
  • 1 ½ – 2 lb. boneless skinless chicken breasts
  • ½ cup Italian dressing
  • 1 tbsp avocado oil or other neutral, high-heat oil
  • 1 tbsp butter
  • 10 oz cremini mushrooms, sliced
  • ½ cup yellow onion, sliced
  • 2 tbsp water (approximately)
  • ¼ tsp white pepper
  • ¼ tsp black pepper
  • ¼ tsp onion powder
  • ¼ tsp garlic powder
  • ½ tsp salt
  • 2 oz Monterey Jack cheese, sliced

Instructions

  1. Place chicken breasts on a plate or cutting board. Use a jacquard tool or fork to poke several holes in each chicken breast. Place the chicken in a dish or a gallon-sized Ziploc bag.
  2. Pour the Italian dressing over the chicken, ensuring it is fully coated. Let it marinate in the fridge for 2 to 24 hours.
  3. Preheat the oven to 400°F (200°C). Heat a cast-iron skillet over medium-high heat and add the oil. Add the marinated chicken breasts to the pan and cook for 5 minutes on each side until browned. Remove from the skillet and set aside.
  4. Reduce heat to medium and add butter. Add the sliced mushrooms and onions to the skillet, sautéing until softened, about 5-7 minutes. Add water to loosen the browned bits at the bottom of the pan.
  5. Sprinkle the white pepper, black pepper, garlic powder, onion powder, and salt over the mushrooms and onions. Stir well and move the vegetables to the side of the skillet.
  6. Return the chicken breasts to the skillet and spoon the mushroom-onion mixture over the chicken.
  7. Top each chicken breast with slices of Monterey Jack cheese and transfer the skillet to the preheated oven. Bake for 10 minutes, or until the chicken is fully cooked and the cheese is melted and slightly browned.

Notes

  • Do not overcook the chicken to ensure it stays tender and juicy. Use a meat thermometer to check the internal temperature (165°F or 74°C).
  • If you prefer a spicier version, consider adding some jalapeños or chili flakes.
  • Feel free to use other cheeses like mozzarella or cheddar if preferred.
  • For a lighter version, replace the butter with olive oil and use a reduced-fat cheese.
