Description

This Vegan Apple Fritter Bread is a soft, gooey pull-apart bread layered with apple butter, cinnamon sugar apples, and topped with a sweet apple cider glaze. Perfect for fall gatherings, holidays, or cozy weekends at home.

Ingredients

Scale
  • ¾ cup warm water
  • 2 ¼ teaspoons active dried yeast
  • ¼ cup melted vegan butter
  • ¼ cup sugar
  • 1 teaspoon vanilla bean paste
  • 2 ½ – 2 ¾ cups all-purpose flour
  • 1 teaspoon ground cinnamon or apple pie spice
  • ½ teaspoon salt
  • 2 small red apples, peeled and diced
  • ⅓ cup sugar
  • 1 teaspoon ground cinnamon or apple pie spice
  • ⅓ cup apple butter
  • ½ cup powdered sugar
  • ½ tablespoon apple cider

Instructions

  1. Add lukewarm water and yeast to a mixing bowl. Let sit 5–10 minutes to activate.
  2. Mix in melted vegan butter, sugar, and vanilla. Stir until combined.
  3. Add flour, cinnamon, and salt. Mix until a shaggy dough forms.
  4. Knead dough until smooth and elastic (5–6 minutes with mixer or 8–10 minutes by hand).
  5. Place dough in a greased bowl, cover, and let rise 1 hour until doubled.
  6. Peel, core, and dice apples. Toss with sugar and cinnamon until coated.
  7. Punch down risen dough and divide into 8–9 pieces. Roll each piece into a disc.
  8. Spread each disc with apple butter, then top with cinnamon-sugar apples.
  9. Fold discs in half and layer in a parchment-lined loaf pan, adding extra apples between layers.
  10. Cover loaf and let rise another 30 minutes while preheating oven to 350°F (175°C).
  11. Bake 45–50 minutes until golden brown and apple filling is bubbling. If needed, cover with foil to prevent over-browning.
  12. Cool bread in pan 10 minutes, then transfer to wire rack to cool completely.
  13. Whisk powdered sugar and apple cider into a glaze. Drizzle over cooled bread and serve.

Notes

  • Do not skip kneading—dough should be smooth and elastic before rising.
  • Use firm apples like Honeycrisp or Fuji for best texture.
  • Store leftovers wrapped or in airtight container for 3–4 days in the fridge.
  • Freeze sliced bread for up to 1 month; thaw before serving.
  • This recipe does not adapt well to gluten-free flour.
