Description

This Vegan Turkey Roast is a savory, protein-packed holiday centerpiece made with tofu and vital wheat gluten, featuring a juicy interior and crispy garlic-butter rice paper skin. Perfect for Thanksgiving, Christmas, or any festive meal, it can be prepared ahead and pairs beautifully with classic side dishes.

Ingredients

Scale
  • 1 (14 oz / 396 g) firm tofu, drained
  • 3 tablespoons nutritional yeast
  • 2 tablespoons water (plus more if needed)
  • 1 tablespoon white miso paste
  • 2 teaspoons onion powder
  • 2 teaspoons vegetable broth powder (or 1 bouillon cube)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried thyme leaves
  • 1/4 teaspoon ground sage
  • 1 1/2 cups vital wheat gluten
  • 1/4 cup vegan butter, melted
  • 4 cloves garlic, minced or pressed
  • 1 1/2 teaspoons soy sauce or 1/2 teaspoon salt
  • 1/2 teaspoon dried thyme leaves
  • 1/4 teaspoon black pepper
  • 1 sheet rice paper

Instructions

  1. Add tofu, nutritional yeast, water, miso paste, onion powder, vegetable broth powder, garlic powder, salt, thyme, and sage to a food processor. Blend until smooth.
  2. Add vital wheat gluten and blend until a soft dough ball forms. If too dry, add more water 1 tablespoon at a time. Do not knead.
  3. Shape dough into an oval roast and wrap in two layers of aluminum foil.
  4. Steam in a basket over boiling water for 1 hour. Remove and allow to cool, ideally overnight in the fridge.
  5. Preheat oven to 400°F (200°C). Mix melted vegan butter, garlic, soy sauce, thyme, and black pepper.
  6. Unwrap cooled roast and place on a greased baking tray. Brush with butter mixture.
  7. Soften rice paper in water for 30 seconds and drape over the roast. Brush more butter mixture on top to secure.
  8. Bake for 15 minutes, brush with remaining butter mixture, then bake another 15–25 minutes until golden and crispy.
  9. Cool for 10 minutes before slicing. Serve hot with vegan gravy or enjoy leftovers cold.

Notes

  • For best texture, refrigerate overnight after steaming before roasting.
  • Do not knead the dough, as it will become tough and rubbery.
  • Vital wheat gluten is essential and cannot be replaced for a gluten-free version.
  • To make oil-free, replace vegan butter with vegetable broth when brushing the rice paper skin.
  • Leftovers are perfect for sandwiches, soups, or salads.
  • Freeze steamed roast before adding skin; thaw before roasting.
