Description

Whipped Feta Bruschetta Dip is a creamy, savory appetizer made with whipped feta, fresh tomatoes, garlic, basil, and balsamic glaze, served with crispy crostini. It’s perfect for summer gatherings or as a savory snack, offering a combination of rich, tangy, and fresh flavors.

Ingredients

Scale
  • 2 cups Heirloom Cherry or Grape Tomatoes, diced
  • 2 cloves Minced Garlic
  • 1/4 cup Fresh Basil, chopped
  • 2 tbsp Extra Virgin Olive Oil
  • 1 tbsp Balsamic Vinegar
  • Salt and Freshly Ground Black Pepper, to taste
  • 1 French Baguette, sliced into 1/2-inch pieces
  • 2 tbsp Extra Virgin Olive Oil (for crostini)
  • 1 Garlic Clove (for rubbing on crostini)
  • 1 cup Creamy Whipped Feta Dip (Feta cheese, 1/4 cup yogurt, 1 tbsp olive oil, 1 tsp lemon juice, 1 garlic clove)
  • 1 tbsp Balsamic Glaze
  • Fresh Basil Leaves (for garnish)

Instructions

  1. Prepare the Bruschetta Topping: In a medium bowl, combine diced tomatoes, minced garlic, chopped basil, olive oil, balsamic vinegar, salt, and pepper. Mix well and set aside.
  2. Make the Crostini: Preheat your oven to 400°F (200°C). Slice the French baguette into 1/2-inch slices. Drizzle with olive oil and rub each slice with a garlic clove. Bake for 6 to 8 minutes or until golden brown.
  3. Prepare the Whipped Feta Base: In a food processor, blend feta cheese, yogurt, olive oil, lemon, and garlic until smooth and creamy. Transfer to a shallow serving bowl.
  4. Assemble the Dip: Spoon the bruschetta mixture over the whipped feta, drizzle with balsamic glaze, and garnish with basil leaves.
  5. Serve immediately with the crostini alongside.

Notes

  • Make-ahead: You can prepare the whipped feta base and bruschetta topping in advance. Store separately in airtight containers and assemble just before serving.
  • Alternative Crostini Method: If you don’t have an oven, you can toast baguette slices in a skillet with olive oil until crispy.
  • Flavor Enhancement: Add a drizzle of hot honey for a sweet-spicy twist.
