Description

Soft, homemade whole wheat bread made with simple ingredients and a sponge method for better flavor and texture. This loaf is perfect for sandwiches, toast, and everyday use, with a tender crumb and mild natural sweetness.

Ingredients

Scale
  • 1 cup (240 ml) warm water: activates the yeast and hydrates the flour
  • 1 cup (240 ml) warm whole milk: adds richness and softness
  • 2 1/4 teaspoons (7 g) active dry yeast: helps the bread rise
  • 1/3 cup (80 ml) honey: lightly sweetens and feeds the yeast
  • 3 tablespoons (42 g) unsalted butter, softened: adds moisture and flavor
  • 1 tablespoon lemon juice: balances flavor and improves texture
  • 4 to 4 1/2 cups (520–585 g) whole wheat flour: provides structure and whole-grain flavor
  • 1 1/2 teaspoons salt: enhances overall taste
  • 1 large egg white (optional): for brushing the top
  • 1 tablespoon rolled oats (optional): for topping

Instructions

  1. In a large bowl or stand mixer, combine warm water, warm milk, and yeast. Whisk gently and stir in about 2 cups of whole wheat flour to form a thick batter. Cover and let rise for 60–90 minutes until doubled.
  2. Add honey, softened butter, lemon juice, salt, and the remaining flour. Mix until a soft dough forms.
  3. Knead the dough for 8–10 minutes by hand or mixer until smooth and elastic. The dough should be slightly tacky but not sticky.
  4. Place dough in a lightly greased bowl, cover, and let rise for 90–120 minutes, or until doubled in size.
  5. Punch down the dough, shape into a tight loaf, and place in a greased 9×5-inch pan.
  6. Cover and let rise again for 45–60 minutes, until the dough crowns about 1 inch above the pan.
  7. Preheat oven to 350°F (177°C). Brush top with egg white and sprinkle oats if desired.
  8. Bake for 36–40 minutes until golden and the internal temperature reaches 195–200°F (90–93°C).
  9. Cool for 10 minutes in the pan, then transfer to a wire rack to cool completely before slicing.

Notes

  • For a lighter loaf, replace 1 cup of whole wheat flour with bread flour.
  • Allowing the sponge to rise fully improves texture and flavor.
  • Let the bread cool completely before slicing for best crumb.
  • Store tightly wrapped at room temperature up to 4 days or freeze slices for longer storage.
