Description

The Yule Log Cake (Bûche de Noël) is a festive and traditional European dessert, perfect for holiday gatherings. This rolled chocolate sponge cake is filled with a light whipped cream filling and coated in a rich chocolate ganache, making it both a visual and a culinary treat.

Ingredients

Scale
  • 4 large eggs, separated
  • 1/2 cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1/2 cup cake flour
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon espresso powder (optional)
  • 1/4 teaspoon salt
  • 8 oz bittersweet or dark chocolate, chopped
  • 1 tablespoon unsalted butter
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt
  • 3/4 cup heavy cream
  • 1 cup heavy cream (for filling)
  • 1/4 cup powdered sugar (for filling)
  • 1 teaspoon pure vanilla extract (for filling)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 10″x15″ baking sheet with parchment paper.
  2. Whip egg whites until soft peaks form, then set aside.
  3. In a separate bowl, whisk together egg yolks and sugar until pale and smooth. Add vanilla and mix.
  4. In another bowl, whisk together cake flour, cocoa powder, baking powder, espresso powder, and salt.
  5. Combine the dry mixture with the egg yolk mixture and stir until thick. Gently fold in the whipped egg whites in two parts.
  6. Pour the batter onto the prepared baking sheet, spreading it evenly. Bake for 10-12 minutes until the cake is springy to the touch.
  7. While baking, lay a clean kitchen towel on the counter and dust with powdered sugar. Once the cake is done, turn it out onto the towel and remove the parchment paper.
  8. Roll the cake gently using the towel, starting from one of the short ends. Let it cool completely.
  9. To make the ganache, heat the heavy cream until it bubbles at the edges. Pour it over the chopped chocolate, butter, and vanilla. Stir until smooth and let it cool.
  10. Whip the remaining heavy cream with powdered sugar and vanilla until stiff peaks form for the filling.
  11. Once the cake is completely cool, unroll it and spread an even layer of whipped cream filling over the surface.
  12. Re-roll the cake and place it seam side down on a platter.
  13. Cover the rolled cake with the chocolate ganache, using a spatula to spread evenly. Use a fork or toothpick to create a log-like texture.
  14. Let the ganache set, then garnish with cranberries, rosemary sprigs, and powdered sugar to resemble fresh snow.

Notes

  • Do not overbake the cake as it can crack when rolling.
  • Make sure the cake is completely cool before unrolling to avoid cracking.
  • If the ganache is too runny, let it cool further to achieve a thicker consistency before spreading.
  • Store leftovers in the fridge for up to 3 days, covered loosely with plastic wrap.
