Ingredients
Scale
- 1 1/2 pounds thin sliced chicken breasts
- Kosher salt (for seasoning)
- Fresh black pepper (for seasoning)
- Garlic powder (for seasoning)
- 1/2 cup flour
- 1/4 cup cornstarch
- 1 cup buttermilk
- 1 tablespoon hot sauce
- 1 large egg
- 2 cups Panko breadcrumbs (or more as needed)
- Vegetable or canola oil (for frying)
- 12 slices mozzarella cheese
- 12 slider rolls
- Bang Bang Sauce (homemade or store-bought)
Instructions
- Season the chicken breasts on both sides with salt, pepper, and garlic powder.
- Set up a breading station: mix flour and cornstarch in one bowl, combine buttermilk, hot sauce, and egg in another, and place breadcrumbs in the third bowl.
- Dip each chicken breast in the flour mixture, followed by the buttermilk mixture, and finally the breadcrumbs. Press breadcrumbs into the chicken to ensure a solid coating.
- Heat a thin layer of oil in a skillet over medium heat. Fry the breaded chicken for 2-3 minutes per side, until golden and crispy. Ensure the internal temperature of the chicken reaches 165°F.
- Once fried, place the chicken cutlets on a paper towel-lined plate to drain excess oil.
- Prepare the Bang Bang sauce by whisking together mayonnaise, sriracha, sweet chili sauce, and honey in a small bowl.
- Assemble the sliders by cutting the fried chicken into smaller pieces and placing them on slider buns. Add a slice of mozzarella cheese while the chicken is still hot to allow the cheese to melt.
- Drizzle the Bang Bang sauce over the chicken and cheese, and serve immediately.
Notes
- If preparing ahead of time, you can store the fried chicken cutlets in a 325°F oven to keep warm or refrigerate and reheat before assembling the sliders.
- For a spicier sauce, increase the amount of sriracha or add some extra hot sauce.
- To make this recipe gluten-free, substitute gluten-free breadcrumbs and slider rolls.
- For a different flavor twist, consider adding sliced pickles or lettuce to the sliders.
